This sounds like more of the issue. An internet connection over a cellular network is not the most reliable for latency-sensitive applications. All the issues I had came from the DNS filtering settings. My solution was to disable DNS filtering within Adguard and pass the responsibility. The problem goes away when I turn off DNS filtering in AdGuard, and is not affected by which DNS service or protocol I select: I get the same.
